I bought Maya Kaimal's Vindaloo flavored Fresh Indian Simmer Sauce in a hurry. We had a potluck to go to in two hours, and I hadn't started cooking at all. So I picked up a large eggplant, a couple small potatoes, and a red pepper, chopped them up, salted the eggplant and started to sautee it, boiled the potatoes, and at the appropriate time threw everything into the simmer sauce and let it rip.

The sauce is terrific, spicy, addictive, and very decadent - there's quite a bit of coconut milk in there. It's also sold in a serving size for 4, so you may just want to use half at a time. It tastes like it just came out of the kitchen, but still, check the expiration date before you buy. I can't wait to try the other vegan flavor, the coconut curry.
